  • 8 boneless skinless chicken breasts
  • 1/2 cup honey Dijon mustard
  • 2 cups panko breadcrumbs
  • 6 tablespoons melted salted butter
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 12 slices Swiss cheese quartered
  • 24 rounds of Canadian bacon approximately 1 pound, sliced into half-moon shapes

Baking Instructions:

  • Make six shallow cuts at a slight angle in each chicken breast, leaving about 1/4 inch unsliced at the bottom.
  • Brush the top of each chicken breast with 1 tablespoon of mustard.
  • In a bowl, mix together the breadcrumbs, butter, salt, and pepper.
  • Evenly sprinkle the breadcrumb mixture over the chicken breasts, pressing it gently into the mustard with your hands.
