- 1 tablespoon of canola oil
- 1 medium white onion finely chopped
- 2 cloves of garlic minced
- 2 teaspoons of ground cumin
- 2 teaspoons of dried oregano
- 1 teaspoon of kosher salt
- 3 cans 15 ounces each of cannellini beans, undrained, divided
- 2 cans 10 ounces each of diced tomatoes with green chilies (like Rotel), undrained
- 1 can 15 ounces of cream-style corn
- 1 can 15 ounces of whole kernel corn, undrained
- 1 can 15 ounces of black beans, undrained
- Meat from 1 rotisserie chicken shredded (approximately 4 cups)
- Juice from 1 lime
- Additional salt to taste
