Ingredients
  

  • 1 tablespoon of canola oil
  • 1 medium white onion finely chopped
  • 2 cloves of garlic minced
  • 2 teaspoons of ground cumin
  • 2 teaspoons of dried oregano
  • 1 teaspoon of kosher salt
  • 3 cans 15 ounces each of cannellini beans, undrained, divided
  • 2 cans 10 ounces each of diced tomatoes with green chilies (like Rotel), undrained
  • 1 can 15 ounces of cream-style corn
  • 1 can 15 ounces of whole kernel corn, undrained
  • 1 can 15 ounces of black beans, undrained
  • Meat from 1 rotisserie chicken shredded (approximately 4 cups)
  • Juice from 1 lime
  • Additional salt to taste
  • Tortilla strips or chips for serving

Instructions
 

  • In a large pot, heat canola oil over medium heat.
  • Add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onions are soft and translucent.
  • Stir in the cumin, oregano, and a pinch of salt.
  • While the onions are cooking, blend two cans of cannellini beans (with their liquid) in a blender until smooth.
  • Add the pureed beans to the pot, along with:
  • The remaining can of whole cannellini beans,
  • Two cans of diced tomatoes with green chilies,
  • One can of cream-style corn,
  • One can of whole kernel corn,
  • One can of black beans,
  • Shredded chicken.
  • Stir everything together until well combined.
  • Let the soup simmer over medium heat until it is fully heated through.
  • Just before serving, add the juice of one lime and adjust the salt to taste.
  • Serve hot with tortilla strips or chips on the side.
