  • 2 tablespoons adobo sauce from a small can of chipotle peppers in adobo sauce
  • 2 tablespoons olive oil
  • 2 tablespoons ancho chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon salt
  • ½ teaspoon black pepper
  • Water as needed
  • 3 to 4 pounds boneless skinless chicken thighs

Instructions
 

Step 1: Prepare the Marinade

  • Combine onion, garlic, adobo sauce, olive oil, chili powder, cumin, oregano, salt, and pepper in a food processor or blender.
  • Blend until smooth.
  • Pour the marinade into a 1-cup measuring cup and add water until the total reaches 1 cup.

Step 2: Marinate the Chicken

  • Use a fork to poke several holes in the chicken thighs.
  • Place the chicken in a resealable plastic bag.
  • Pour the marinade over the chicken, seal the bag, and massage it to coat the chicken evenly.
  • Refrigerate for at least 1 hour or overnight.
