  • 1.5 pounds of zucchini noodles zoodles, made from approximately 3 medium zucchinis
  • Kosher salt to taste
  • 1/3 cup of plain breadcrumbs
  • 1/4 cup of whole milk
  • 8 ounces of ground turkey
  • 1/4 cup of ricotta cheese
  • 2 tablespoons of freshly chopped parsley
  • 1 tablespoon of finely grated Parmesan cheese plus extra for garnish
  • 1/2 teaspoon of dried oregano
  • Freshly cracked black pepper to taste
  • 1 1/4 cups of your favorite store-bought tomato sauce

Instructions
 

Step 1: Prep the Zoodles

  • Place the zoodles in a large bowl.
  • Sprinkle with a generous pinch of salt and let them sit for 10 minutes to release excess moisture.
  • After resting, pat them dry with paper towels and set aside.

Step 2: Make the Meatball Mixture

  • In a medium bowl, combine the breadcrumbs and milk. Let sit for about 5 minutes to soften.
  • Add ground turkey, ricotta, parsley, Parmesan, oregano, 1/2 teaspoon salt, and black pepper to the breadcrumb mixture.
  • Mix thoroughly with your hands until well combined.
  • Form the mixture into 12 evenly-sized meatballs (about 1 inch wide).

Step 3: Cook the Meatballs in the Air Fryer

  • Preheat the air fryer to 400°F (200°C).
