  • 1 small carrot diced
  • ½ cucumber peeled and diced
  • ½ red bell pepper chopped
  • ¼ cup 40g steamed corn kernels

For the Dressing:

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lemon juice optional
  • ½ teaspoon salt
