Ingredients
  

  • 2 tbsp butter 2 tablespoons olive oil
  • 2 small shallots finely chopped
  • 3 cloves garlic minced
  • ½ cup Dry White Wine such as Sauvignon Blanc
  • 8 ounces Angel Hair Pasta
  • 1 cup Chicken Broth low-sodium or unsalted
  • ¼ tbsp Crushed Red Pepper Flakes adjust to taste
  • 1 pound Shrimp peeled and deveined (frozen or fresh)
  • ½ cup Parmesan Cheese grated (plus extra for serving)
  • 2 tbsp Fresh Parsley chopped (Italian flat-leaf)
  • 1 tbsp Lemon Juice freshly squeezed

Instructions
 

Step 1: Sauté garlic and shallots

  • Set your Instant Pot to sauté mode.
  • Add olive oil and butter.
  • Once melted, add chopped garlic and shallots.
  • Sauté for a few minutes until tender and fragrant.

Step 2: Add wine

  • Pour in the wine and stir for an additional minute to enhance the aroma.
  • Turn off the heat.

Step 3: Add half of the broth

  • Pour in half of the broth and scrape any brown bits from the bottom of the pot.

Step 4: Add pasta

  • Break the angel hair pasta in half and layer it in a criss-cross pattern inside the Instant Pot. This prevents the pasta from clumping together.

Step 5: Add the remaining broth

  • Pour the rest of the broth over the pasta, making sure the pasta is spread out.

Step 6: Add red pepper flakes and shrimp

  • Sprinkle red pepper flakes over the pasta.
  • Arrange the frozen shrimp on top of the pasta.
  • Season with a pinch of salt.

Step 7: Pressure cook

  • Secure the lid on the Instant Pot.
  • Set the Instant Pot to Manual or Pressure Cook for zero minutes (yes, really!).
  • The cooking time is so short that by the time the pressure cooker comes to pressure, the pasta and shrimp will be perfectly cooked.
