Instructions
Preheat a grill or grill pan to medium heat.
Drizzle the zucchini, eggplant, red pepper, and scallions with olive oil, then sprinkle with salt.
Grill the vegetables for about 3 minutes on each side, or until they are charred.
Remove the vegetables from the grill and let them cool slightly.
Once cooled, chop the vegetables into 1-inch pieces.
In a mixing bowl, combine the chopped vegetables with cherry tomatoes, garlic, sherry vinegar, herbs de Provence, and basil.
Season to taste.
Serve the vegetable mixture on toasted bread, topped with goat cheese or hummus.
